Green Desserts for St. Patrick’s Day

Everywhere you look on St. Patrick’s Day something is green. It’s the color associated with St. Patrick’s Day and green is in these desserts!

“This Pistachio Nut Cake uses a yellow cake mix, instant pistachio pudding and it’s covered with pistachio flavored whipped topping,” explains Laura Davis (Rusk, TX).

Laura’s cake is so green and sooo good! Thanks to the pistachio pudding mix the cake is super moist. It adds a bit of flavor too. I like to double the amount of icing for full coverage. This simple dessert is festive and full of pistachio flavor.

Three cheers for Kathie Carr’s (North Liberty, IN) Go Irish Brownies.

“A ‘watching Notre Dame Women’s Basketball’ party inspired this recipe,” shares Kathie. “This party needed something new and equally good. Good for St. Patrick’s Day or anytime!”

These sweet fellas were gone in a flash. There’s a hint of Irish cream in each layer. The brownies themselves are fudgy and full of chocolate. I love the Irish cream cream cheese frosting on top. It’s tangy, sweet, and, thanks to green food coloring, fun.

Who knew that pistachio and Irish cream would be such a great flavor combination! Sheila Senghas (Concan, TX) did when she shared her Irish Cream Pistachio Parfait.

“Careful, after eating this delicious Irish Cream dessert you will be kissing the Blarney Stone for sure,” jokes Sheila. “I made this for my great-nephew Patrick to celebrate his Irish heritage on St Patrick’s Day.”

This dessert is creamy, flavorful, and boozy. Perfect for St. Patrick’s Day. Made with just four ingredients, it can be whipped up in a pinch.

Toffee is a yummy snack. It’s buttery, nutty flavor just melts in your mouth. Drizzling sweet and smooth white chocolate over it brings Nancy Andersen’s (Rigby, ID) St. Patrick’s Day Toffee Popcorn w/White Chocolate to a new level.

“Made this for our office party for St. Patrick’s,” says Nancy. “It’s yummy!”

I love the festiveness the green food coloring brings to this delicious treat. You could customize the colors based on different holidays, a favorite color, school colors, etc. The options are endless!

Red velvet cupcakes are one of my favorites. So I, of course, loved Lisa ‘Gayle’ Goff’s (Chula Vista, CA) St. Patrick’s Day twist.

“This one is sure to add a little green to any tongue,” thinks Lisa. “These are so pretty to look at and with the double cream cheese frosting they are delicious as well.”

Lisa’s Green Velvet Cupcakes are light and fluffy with great flavor. The traditional cream cheese icing is creamy, buttery, and tangy. A perfect complement to the velvety cupcakes.
