Key Lime Cheesecake

It’s vacation season! Want to know my big travel plans for the summer? Sipping on some sweet tea or lemonade and enjoying my back porch.

But, just cause I’m sticking close to home, it doesn’t mean I can’t travel. Thanks to some tasty recipes, my taste buds can help me take a trip around the world!

My adventure kicks off in Argentina, with Adriana Torres’ perfectly spicy and 100% delicious Flaky Chorizo Potato and Cheese Empanadas. “Empanadas can be made in many different ways to compliment various stuffings,” reveals Adriana.

Here, she paired chorizo, potato and cheese into one amazing empanada. The combination of flavors is so savory. Depending on how large you cut the dough, you can serve these as a small appetizer or pair them with a salad for a filling dinner.

Next up, Grishma Shah’s Eggplant Dip/Raita is taking me to India! This recipe has been handed down through generations of her family. With that much tradition you know it must be good.

“This dip is one of my favorite condiments that I enjoy with Indian food, vegetables or with warm grilled pita bread,” shares Grishma. Green chilies, garlic, ginger, cilantro combined with eggplant creates a mix of flavors that is downright perfection. If you enjoy Indian food, take a look at Grishma’s recipe.

Greece is a country I’ve always wanted to visit, and Amanda Smith’s Greek Beef Gyros will take me there (well, sort of!). “My husband and I love this sandwich,” exclaims Amanda. “I usually end up making them at least every other week.”

This recipe is a quick and easy way to enjoy a gyro. I’d listen to Amanda’s tip about making the sauce ahead of time. The longer the cucumber, dill, and garlic stew together the better. Great flavor, healthy ingredients!

If you want to talk flavorful recipes, try Kathy Sills’ Tuscan Chicken Bruschetta with Lime Olive Salsa. “This chicken bruschetta is perfect for a light meal,” says Kathy.

The lime olive salsa is so good. It complements the flavorful chicken perfectly. Pair this with a lovely Sangiovese wine and you’ll think you’re in the rolling hills of Tuscany.

Sue H.’s Key Lime Cheesecake takes me a little closer to home. Whenever I take a bite of anything key lime, I think back to my wonderful Key West vacations. “If you love lime, you will love this cheesecake,” exclaims Sue

This light and creamy cheesecake offers up some delightful lime flavor! It’s a perfect dessert to enjoy on a hot summer night.

I’ll end my around the world “vacation” in New Orleans. One bite of Donna Graffagnino’s tasty Chicken & Andouille Gumbo and you’ll think you’re on Bourbon Street. “Everyone has their own way of making chicken and sausage gumbo, and this is mine,” explains Donna.

Gumbo is a New Orleans staple and Donna packs some big flavors into hers! It definitely takes a bit of time to make a batch, but it will be well worth your time.
