12mozzarella balls fresh

2-3 cmarinara sauce

1-2roma tomatoes
How To Make easy eggplant parmesan

1Cut eggplant into slices lay on a flat sheet and throw a little bit salt on them and sweat them for 30 minutes.

2Bread crumbs add salt and pepper garlic salt Parmesan cheese and coconut flakes set aside

3Eggs scrambled and dip eggplant from egg to bread crumbs mix

4Heat up skillet with coconut oil and lightly fry your Battered eggplant set on paper towel

5Place fried eggplant in baking dish layer with fresh spinach , thin sliced Roma tomatoes, mozzarella balls and cut sweet fresh basil into strip place on top Put into heated oven heat up just enough until the mozzarella melts 6-9 min oven 400f Serve over marinara heated sauce.
