You can use my fresh salsa verde recipe or buy it in a jar. This is so tasty with the flavorful rotisserie chicken and all the cheeses. It was a big hit.

Ingredients For chicken enchilada with my fresh salsa verde

  • 2 sm
    rotisserie chicken skin removed meat shredded or chopped about 6 cups
  • 1 sm
    can chopped green chilies
  • 1 jar
    tostitos salsa con queso
  • 1/2 c
    cotija cheese
  • 1/2 c
    queso fresco cheese crumbled
  • 1 c
    fresh cilantro
  • 10
    burrito size flour tortillas.
  • 4 c
    fresh salsa verde
  • 2 c
    mexican mixed shredded cheese

How To Make chicken enchilada with my fresh salsa verde

    Preheat oven 400 degrees Mix the chicken, green chilies, Queso, Cojita, Fresco cheeses and cilantro together.

    Take a large baking pan and spray it with cooking spray. Fill each tortilla with chicken mixture and roll up and put in the baking pan.

    Pour the salsa verde over the top and bake about 30 minutes. Remove from oven. Sprinkle the Mexican mix cheese on top and place back in oven until the cheese has melted. Enjoy
