Ingredients For chicken vindaloo

  • 4
    bone in chicken thighs
  • salt and pepper
  • 3 Tbsp
    ghee or butter
  • 4 clove
    garlic minced
  • 1 lg
    onion diced
  • 2 Tbsp
    ground ginger
  • 1 Tbsp
    each paprika and turmeric
  • 2 tsp
    cumin, salt and ground mustard
  • 1 tsp
    cinnamon
  • 1/2 tsp
    ground cloves
  • 1/4 tsp
    cayenne pepper
  • 1/4 c
    brown sugar
  • 2 Tbsp
    white vinegar
  • 2 tsp
    lemon juice
  • 2 Tbsp
    tamarind paste
  • 2 c
    water

How To Make chicken vindaloo

  • 1
    Salt and pepper the chicken. Heat the ghee or butter in a large skillet. Brown the chicken and remove to a Dutch oven. Leave the fat in the skillet.

    Add the garlic and onion to the pan and saute until softened. Add the onion mixture to the pan with chicken. Mix all the spices together with the brown sugar.

    Pour the spice mixture over the chicken then add the vinegar, lemon juice and tamarind paste. Stir in the water. Cover and simmer 20 minutes. Remove the cover and simmer for 10 more minutes to reduce the sauce and thicken it. Serve with Basmati rice and naan
