This is a great recipe for crispy Belgian waffles! Prep time does not include time to rest the batter. You can make the batter ahead of time - just bring it back to room temp before cooking. Enjoy!

Ingredients For crispy belgian-style waffles

  • 2 1/4 c
    flour
  • 2 Tbsp
    sugar
  • 1 tsp
    salt
  • 1 tsp
    instant yeast (must be instant)
  • 1/2 c
    butter, melted (1 stick)
  • 1 1/2 c
    warm water
  • 2 lg
    eggs, room temperature
  • 1/3 c
    milk

How To Make crispy belgian-style waffles

    In a big mixing bowl, combine the flour, sugar, salt and the instant yeast. (Make sure you use a pretty big bowl because the dough will expand a bit.)

    Then, whisk in the melted butter and warm water. Mix well until the dough comes together (it’s ok if it’s a little bit lumpy). Cover the top of the bowl with some plastic wrap and let the dough sit at room temperature for at least an hour. If making the waffles later, you can refrigerate this overnight after letting it rest. Just make sure you bring the dough back to room temp before using it.

    Preheat a waffle iron to medium heat.

    Remove the plastic wrap from the batter bowl. The batter should be bubbly and a little fragrant from the yeast. Add the eggs and milk to the batter, and whisk together.

    Next, brush the waffle iron with a little melted butter, or spray with some nonstick cooking spray. Pour an even layer of batter into the waffle iron and cook for about 6-8 minutes - or until crispy and brown.

    Serve immediately or place the waffles on a cooling rack set over a sheet tray; keeping them warm in a 200°F degree oven.
