Ingredients For sweet potato patties with spicy tomato chutney
- VEGETABLE PATTIES:

1 1/4 lbsweet potatoes

7 ozcarrots
-
12 ozzucchini
-
1green chile (asian or serrano)

1scallion
-
2 Tbspplain yogurt
-
salt and black pepper

1 tspvegetable oil
- SPICY TOMATO CHUTNEY:

4tomatoes
-
1red chile, to taste
-
2 Tbspfresh mint, chopped

1 Tbspcider vinegar
-
1 pinchsea salt
How To Make sweet potato patties with spicy tomato chutney

1To make the chutney, roughly chop the tomatoes, finely chop the chilies, then mix with the mint, vinegar and salt. Set aside until ready to serve.

2To make the patties, first boil and mash the sweet potatoes. Trim and grate the zucchini, sprinkle with salt, and set aside for 30 minutes to draw out some of the juices. Drain and pat dry.

3Grate the carrots, seed and chop the chile and slice the scallion.

4Mix all the vegetables in a bowl, together with the yogurt, salt, and pepper.

5With floured hands, shape the mixture into 8 patties.

6Heat a shallow layer of oil in a skillet and saute the patties for 4 minutes on both sides until golden light.

7Serve immediately with the spicy tomato chutney.
