I love this simple side dish that goes well with almost everything. You can make it as mild or spicy as you like with the seasoning.

Ingredients For sauteed zucchini with mushrooms

  • 1/2 sm
    onion, sliced
  • 1 lb
    mushrooms, sliced
  • 4-6
    zucchini, sliced
  • seasoning, to taste (i use spicy mrs. dash, but lawry's or spike all work well)
  • 1 c
    mozzarella cheese, shredded

How To Make sauteed zucchini with mushrooms

    Saute onions in butter for 3-4 minutes.
  • 2
    Add zucchini and saute 3-4 minutes.

    Add mushrooms and saute until all veggies are tender. (Don't overcook or they will be soggy).

    Sprinkle with seasoning; stir to mix well.

    Turn off the heat and top with mozzarella cheese until the cheese melts. (I cover with a lid to melt the cheese).

    Serve and enjoy.
