I love a good egg salad, and over the years have developed one that suits my tastes, and those of my guests. I’ve tried to eliminate some of the ingredients that are normally found in an egg salad, and instead focus on elements that would enhance the eggs. One of the secrets is to use good fresh eggs, and cook them between medium and hard. The other thing is the combination of spices I use for the dressing. They are simple yet tasty. So, you ready… Let’s get into the kitchen.

Ingredients For egg essentials: the ultimate egg salad

  • PLAN/PURCHASE
  • 6 lg
    fresh eggs, between medium-to-hard boiled
  • 1 stalk
    celery, finely chopped
  • 3 Tbsp
    mayonnaise, plain variety
  • 1 Tbsp
    fresh dill, chopped
  • 1 Tbsp
    dijon mustard, i prefer grey poupon
  • 1 Tbsp
    fresh horseradish
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • ADDITIONAL ITEMS
  • fresh dill, for garnish
  • paprika, for garnish

    Gather your Ingredients (mise en place).

    Chef’s Tip: After you hard-boil the eggs, place them in a bowl of ice water for about 15 minutes, before peeling. The shock of the cold water will help to keep the yolks a nice bright yellow.

    Peel the medium-to-hard boiled eggs, and cut into chunks.

    Chef’s Note: I don’t like to chop the eggs too fine. Those chunks of white and yellow make for a great visual presentation.

    Combine the celery, mayonnaise, dill, mustard, and horseradish in a separate bowl.

    Salt and pepper the mixture, to taste.

    Add the chopped eggs, and carefully fold them into sauce.

    Chef’s Note: The object here is to be very careful with the mixing, and preserve those nice chunks of yellow yolk.

    Serve on a bed of lettuce with some tomatoes, or on top of a nice toasted bagel. Enjoy.
