Ingredients For potatoes with peanut sauce

1/2 croasted peanuts, peeled

1/2 cskim milk

1 tspcanola oil

1/4 conion, chopped (white or yellow)

1garlic clove, minced

1 Tbspred bell pepper, finely chopped

1/2 cchicken broth, defatted
-
1/4 tspsalt
-
1/4 tspground white pepper
-
1/8 tspannatto powder

1 lbred potatoes, peeled, sliced or cubed, cooked

lettuce leaves
-
1 tspfresh cilantro, chopped

5 tsppeanuts, chopped, for garnish
How To Make potatoes with peanut sauce

1In a blender or food processor, blend peanuts and milk until smooth.

2Heat oil in a non-stick skillet over medium-high heat. Saute onion, garlic, and pepper for 1-2 minutes. Stir in chicken broth, peanut sauce, salt, and pepper.

3Cook over medium-low heat until sauce thickens, about 8-10 minutes. Add the potatoes and toss gently.

4Serve over lettuce leaves. Sprinkle each serving with cilantro and chopped peanuts.
