Ingredients For potatoes with peanut sauce

  • 1/2 c
    roasted peanuts, peeled
  • 1/2 c
    skim milk
  • 1 tsp
    canola oil
  • 1/4 c
    onion, chopped (white or yellow)
  • 1
    garlic clove, minced
  • 1 Tbsp
    red bell pepper, finely chopped
  • 1/2 c
    chicken broth, defatted
  • 1/4 tsp
    salt
  • 1/4 tsp
    ground white pepper
  • 1/8 tsp
    annatto powder
  • 1 lb
    red potatoes, peeled, sliced or cubed, cooked
  • lettuce leaves
  • 1 tsp
    fresh cilantro, chopped
  • 5 tsp
    peanuts, chopped, for garnish

How To Make potatoes with peanut sauce

    In a blender or food processor, blend peanuts and milk until smooth.

    Heat oil in a non-stick skillet over medium-high heat. Saute onion, garlic, and pepper for 1-2 minutes. Stir in chicken broth, peanut sauce, salt, and pepper.

    Cook over medium-low heat until sauce thickens, about 8-10 minutes. Add the potatoes and toss gently.

    Serve over lettuce leaves. Sprinkle each serving with cilantro and chopped peanuts.
