Potato patties dabbed with cream and coated with a layer of melted cheese make an impressive side dish.

Ingredients For byron potatoes

  • 4 lg
    baking potatoes, scrubbed
  • 1/3 c
    unsalted butter
  • 2 Tbsp
    heavy cream
  • 1/2 c
    cheddar cheese, grated
  • salt and freshly ground black pepper

How To Make byron potatoes

    Preheat the oven to 400°F.

    Prick the potatoes with a fork, place on a baking sheet and bake for 45 minutes to 1 hour, or until cooked through and tender when tested with the point of a sharp knife, or squeezed between finger and thumb.

    While they are still hot, cut the potatoes in half. Using a metal spoon, scoop out the flesh. Mash lightly, stir in the butter, season to taste with salt and freshly ground black pepper, then allow to cool.

    Sprinkle a little flour onto a work surface and, with floured hands, divide the mixture into four equal portions. Shape each portion into a ball, then gently press into round patties 3/4-inch thick. Transfer to an oiled baking sheet.

    Preheat the broiler to high.

    Make an indentation 1/2-inch deep in the center of each patty with your thumb or the back of a teaspoon, then pour in some cream. Sprinkle the cheese over the patties, place under the hot broiler and cook until the cheese is melted and browned.

    NOTE: These can be prepared in advance, or having shaped and made the indent, the patties can be left for a few hours until ready to finish.
