Ingredients For easy cajun chicken and rice

  • 6
    chicken thighs, ( bone in and skin on)
  • 3 Tbsp
    extra virgin olive oil
  • 5 clove
    garlic, crushed
  • 1 lg
    onion, sliced thinly
  • 1 1/2
    red bell peppers, sliced in thin strips
  • 3 Tbsp
    cajun seasoning
  • 1 1/2 c
    long grain white rice
  • 1 2/3 c
    pitted manzanilla olives, cut in half
  • 3 Tbsp
    fresh italian parsley, chopped finely finely
  • 1 1/2 tsp
    better than bouillon chicken

How To Make easy cajun chicken and rice

    Rub chicken thighs with 2 T of cajun seasoning.

    Heat a large skillet with 1/2 the oil over medium high heat. Cook the chicken on both sides until golden brown, about 6-7 minutes.

    Add the rest of oil and cook onion over medium high heat until softened, about 5 minutes. Add garlic, rice and the rest of the cajun seasoning and cook for 1 minute. Add bell pepper, chicken bouillon, and 3 cups of water. Bring to a boil and lower heat. Add the chicken and put a lid on the skillet. Cook for about 15 minutes until the chicken and the rice are done.
