Ingredients For chicken burgers with pickled carrots

  • 1 lb
    boneless skinless thighs
  • 2 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1/2 c
    diced red or yellow pepper finely diced
  • 1/2 c
    onion finely diced
  • 1/2 tsp
    poultry seasoning
  • 1/4 tsp
    red pepper flakes
  • 3 clove
    garlic minced
  • 1/4 c
    ritz crackers crushed
  • 1/4 c
    seasoned bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1 tsp
    salt
  • 1/4 c
    mayonnaise
  • 2 Tbsp
    fresh parsley finely chopped
  • 1 lg
    egg
  • 1 tsp
    dijon mustard
  • 4 slice
    cheese your favorite
  • 4
    buns
  • 1/2 c
    shredded carrots
  • 1/4 c
    white vinegar
  • mayonnaise for serving

How To Make chicken burgers with pickled carrots

    Cut the thighs into strips and place in food processor. Process until they are pea size pieces. Divide mixture in half.

    Melt 1 tbsp butter in frying pan and add the peppers, onions, red pepper flakes and poultry seasoning. Cook until softened then add the garlic and cook 30 seconds.

    Add half the ground chicken and cook until done. Set aside and cool completely.

    Meanwhile mix the carrots and white vinegar and set aside.

    In a large bowl add the cracker crumbs, bread crumbs, Parmesan, mayonnaise, parsley, salt, egg, and mustard. Add in the raw chicken and the cooked chicken mixture. Mix well, If the mixture is to wet add a little more cracker crumbs.

    Shape into 4 patties and place in fridge to let them firm up about 30 minutes.

    Place butter and oil in frying pan. Add the patties and brown on both sides flipping often. Use a probe thermometer to make sure they are at least 150 degrees

    Add a slice of cheese to each patty and place the lid over the patties until cheese melts.

    Drain the carrots and pat dry. Add the chicken burger to the bottom buns. Spread some mayonnaise on the top bun and add the pickled carrots.
