My daughter makes the best empanadas, ( her husbands co-workers always beg him to get her to make them some, lol,) but she fries them and uses beef. They ARE very good but a little too unhealthy for me so I made some tweaks and got these, which are very good also...WEPA!

Ingredients For healthier empanadas grande

  • 1 lb
    ground turkey
  • 1 c
    chopped spanish onion
  • 1 c
    chopped green bell pepper
  • 1
    14.5 oz can diced tomatoes, ( don't drain.)
  • 1 Tbsp
    chili powder
  • 1
    packet of sazon by goya
  • 1/2 tsp
    goya adobo, light
  • 2 c
    shredded mexican-style cheese
  • 1 box
    ready made pillsbury, ( or homemade,) pie crusts

How To Make healthier empanadas grande

  • 1
    Spray a large skillet w/ cooking spray, place over medium-high heat. Add ground turkey, onion & green bell pepper. Cook, stirring until turkey is cooked.

    Add the can of undrained tomatoes, chili powder, the packet of Sazon and the Adobo. Reduce heat to medium and simmer for about 20 mins, or until sauce is thickened.

    Heat oven to 400. Place 1 pie crust on a lightly floured surface. Spoon about 1/2 of the turkey mix onto a half of the crust, sprinkle w/ 1.2 the shredded cheese. Fold the other 1/2 of the pie crust over turkey & cheese mix. Seal edges w/ a fork Place on a lightly sprayed cookie sheet. Repeat w/ other pie shell. Lightly spray the tops of Empanadas w/ olive oil cooking spray and bake about 20 mins or until golden brown. I serve these w/ a side of mild salsa or taco sauce and sour cream,
