Ingredients For squash stir-fry

  • 3 md
    yellow squash, sliced
  • 3 md
    zucchini, sliced
  • 1/4 c
    green bell pepper, diced
  • 2 sm
    tomatoes, diced
  • 1/2 tsp
    dried oregano
  • 1 tsp
    dried parsley
  • 1/4 tsp
    garlic powder
  • 1/2 tsp
    dried thyme
  • salt, to taste
  • black pepper, to taste
  • 2 Tbsp
    extra virgin olive oil
  • 1/2 c
    chicken broth
  • 1 Tbsp
    corn starch, optional
  • 1 tsp
    water

How To Make squash stir-fry

  • Heat oil in a wok or skillet.

    In a wok or large skillet, heat the oil.
  • Saute zucchini, yellow squash, and bell peppers.

    Add the squash, zucchini, and bell pepper. Cook until tender.
  • Add tomatoes and seasonings.

    Add the remaining ingredients and simmer for 20 minutes.
  • Can add a corn starch slurry to thicken the sauce.

    If you want a thicker sauce, combine 1 Tbsp of water with 1 tsp of corn starch and add to the veggies while they simmer.
